Vegan Taco Bake

Taco Bake
Ingredients:
1 Bag Beyond Beef Crumbles (Or meat replacement of choice)
½ White Onion, Diced
3 Tbs Tomato Sauce
2 Tbs Chili Powder
1 Tbs Ground Cumin
1 Tsp Smoked Paprika
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Oregano
4 Cassava Tortillas (Or tortilla of choice)
3 c Daiya Cheddar Cheese Shreds (Or dairy-free cheese of choice)
1 15 oz can Black Beans
1 15 oz can Corn
1 Jalapeno, sliced
1 Tbs Tofetti (or dairy free sour cream of choice)
½ c Olives, Sliced
Salt and Pepper to taste
Directions: Preheat oven to 350 degrees F.
- Place 2 uncooked tortillas in bottom of small baking dish. Set aside.
- On stovetop, saute onions for 3 minutes. Then, add beef crumbles, tomato sauce, and spices. Mix until combined and warm.
- Put meat mixture on top of tortillas. Place more tortillas on top, and then add another layer of beef mixture, creating 2 layers. (You can stack this as much as you want to).
- When done layering, top the pan with shredded cheese, and bake for 18-22 minutes. Top with olives, Jalapeno, and Tofutti, and enjoy your taco bake!
