Black Rice Buddha Bowl

Is there an easier and quicker way to prepare a meal than to just literally dump everything into a bowl? I don’t think so! You’re going to want to try this Black Rice Buddha Bowl!

Here’s what you’ll need:

Ingredients: 

1 c Black Rice (I used Ralston Family Farms Purple Rice, available at Melanie’s Health and Nutrition)

2 Mangos, Diced

2 Carrots, thinly sliced (You can use julienne cut carrots)

1 Large Cucumber, thinly sliced (Or cubed, whatever you like)

1 c Purple Cabbage, chopped (I threw some cabbage into a food processor and pulsed it 3 or 4 times)

1 c Cooked Edamame, shell removed

1 Avocado, Sliced (or 5… I love avocado!)

Dressing:

1/4 c Tahini

3 Tbs Water

1 Lime, juiced

2 tsp. Hot Sauce (such as sriracha)

Sea Salt and Pepper to taste

Opt. Cilantro for Garnish

Directions: Prepare rice as directed on package.

2. While rice is cooking, slice and chop your vegetables and mangoes. Set aside.

3. To prepare dressing, whisk together tahini, water, lime juice, hot sauce, salt, and pepper until creamy. (The tahini will look a little weird at first, but keep whisking, it will get creamier).

3. When rice is done, dump into a bowl (or into 4 small bowls, if everyone wants their own mini bowl), then add your mango and vegetables. Drizzle with dressing and garnish with cilantro.
