Here’s what you need:
3/4 c Almond Meal
1/4 c Butter, melted
8 oz Cream Cheese, Softened
1 c Monk Fruit (Or sweetener of choice)
1 tsp. Vanilla
2 Large Eggs
12 Cup Muffin Tin
Directions: Preheat oven to 350 Degrees F
2. Mix melted butter and almond meal in a small bowl. Press mixture into bottom of cupcake liners, placed in muffin tin, to form a crust.
3. Using an electric mixer, beat together the cream cheese, monk fruit, and vanilla until creamy. Then, add the eggs and mix until combined and creamy.
4. Pour mixture into cupcake liners, filling almost to the top.
5. Bake for 15-18 minutes
6. Remove from oven and allow to cool. When cooled to room temperature, place in refrigerator and allow to cool for 8 hours or overnight.
